I had the most delicious salad the other night so I decided to try to recreate it. My first try I marinaded the watermelon in balsamic and then realized I didn’t have any arugula. The goat cheese with the tomato and watermelon is wonderful. I made it again and added the arugula. With or without the arugula this is delicious and I just wish it was earlier in the season so I could eat it again. So I did several times – see the new photos.
Ingredients:
2 cups sliced watermelon, cubed or triangles
tomatoes
6 ounces arugula
goat cheese with spices
Harris Ranch Napa Valley Olive Oil
Harris Ranch Napa Valley Balsamic Vinegar
In a small bowl mix the watermelon and the 1 tablespoon balsamic vinegar – season with salt and pepper.
In another bowl whisk the remaining 3 tablespoons of balsamic vinegar with the olive oil, add the arugula and toss, add the watermelon, tomatoes. Cut the goat cheese into pieces and scatter across it.
